Shrimp with Guacamole

Shrimp with Guacamole
We all know how popular shrimp cocktail is at a party. You can make a Mexican style party appetizer with precooked cocktail shrimp, guacamole and lime tortilla chips.


INGREDIENTS:


• Cooked cocktail shrimp, defrosted and shells completely removed
• Corn tortilla chips (hint of lime style are good for this)

for the guacamole:


• 2 large ripe avocadoes
• 1 Tbs deseeded, minced jalapeno pepper
• 1 small clove garlic, minced
• 1/4 cup chopped fresh cilantro
• 1/2 tsp ground cumin (or more to taste)
• juice of 1/2 lime
• salt to taste


PROCEDURE:


Use a spoon to scoop the flesh of two large, ripe avocadoes into a mixing bowl and then add 1 Tbs of minced, deseeded jalapeno pepper, 1 small minced clove of garlic, about 1/4 cup chopped fresh cilantro, ½ tsp ground cumin and a pinch of salt and finally, squeeze the juice of half a lime into it.

Use a fork to mash this up, or if you have a potato masher that works especially well! All that's left is to put a bite sized dollop of guacamole on top of each corn chip with a cocktail shrimp on top of that.


HINTS:


For a faster version, buy store bought guacamole in a pinch.


Makes about 2 cups
