Bright lime flavors embrace plump little shrimp in this festive yet easy main dish.
Ingredients:
• 1 cup frozen or fresh corn
• 1 scallion, sliced on the diagonal
• ½ red pepper, sliced into thin strips
• ½ tsp cumin
• ½ tsp chili powder
• ½ tsp onion powder
• 1 garlic clove, minced
• 1 lb. med shrimp, de-veined and shelled
• Juice of 1 lime
• ½ cup cilantro, washed and chopped
• ½ avocado, sliced into 6 wedges
• ½ cup crumbled queso (Mexican cheese) or shredded cheese of your choice
• 6 corn tortillas, soft
Directions:
Preheat the oven to 350.

In a large non stick pan over med heat begin by sautéing the corn thru red pepper and for 3 minutes Add the spices, cumin thru garlic, and stir will to mix.
Now add the lime juiceto deglaze the pan and then add the shrimp until all are pink.
Add the cilantro.
Remove from heat, set aside.
Heat the tortillas in the oven 1 minute until just warm.
Remove tortillas, place 3 on each plate and fill each with shrimp mixture.
Top with queso (or your favorite cheese) and whatever salsa or hot sauce you like.
Serve with avocado slices on the side.
