Ingredients:
• 1 pound whole wheat pasta
• 2 tomatoes, diced
• 1/2 red onion, finely diced
• 2 cloves garlic, finely chopped
• 1/2 cup Kalamata olives, cut in half
• 1/2 cup olive oil
• Fresh herbs, basil oregano and parsley
• Parmesan cheese
• Salt and pepper
Procedure:
You can make this great tasting pasta salad with homegrown plants and vegetables right in your back yard.
Cook pasta according to directions on the box. Place tomatoes, onion, garlic and olives in your serving bowl.
Drain pasta and place on top of ingredients in bowl. The heat of the pasta will warm the ingredients in the bowl.
Let sit for 5 minutes. Top with olive oil, fresh herbs, cheese and salt and pepper. Mix through and serve.
Can be eaten warm or cold.
