Ingredients:
• 1 Tbs olive oil 1 large onion, chopped
• 1 cup cashews, toasted
• 1/2 tsp garlic powder
• 1 1/2 cups string beans, steamed, cooled and cut into pieces
• 1 Tbs lemon juice
• salt and pepper to taste
Procedure:
Passover can be tough on vegetarians, but try this great vegetarian take on chopped liver.
Add oil to pan and cook onions until browned and caramelized, about 10 minutes on low heat.
Add onions and all other ingredients (thru lemon juice) in a food processor and blend until a smooth purée, making sure to scrape down the sides.
Serve at room temperature.
Makes 2 cups.
